原料
苦瓜---------500克
大葱---------30克
调料
花椒---------10克
姜片---------15克
精盐---------2小匙
味精---------1小匙
香油---------适量
制作步骤
1 大葱去根和老叶,洗净,切成细丝,放入碗中,加入精盐拌匀,再浇入烧热的香油稍焖成葱油。
2 苦瓜切去两端,洗净,顺长切成两半,挖去瓜瓤,斜切成大片,放入沸水锅内焯至断生,捞出沥水,放入容器中,趁热撒上少许精盐拌匀。
3 锅中加入少许香油烧热,下入花椒、姜片煸炒出香味,捞出花椒和姜片不用,将热油浇淋在苦瓜片上拌匀。
4 再加入味精,倒入焖好的葱油调拌均匀,放入冰箱内冷藏保鲜,食用时取出,码盘上桌即成。
