片鱼看似很难,其实只要抓住诀窍,也并非十分复杂。本章将从比较简单的沙丁鱼和墨鱼开始介绍,再介绍比较困难的比目鱼和海鳗。

鱼片成三片,从左到右分别是下侧、上侧和中骨,中骨就是鱼骨部分。
片鱼必备工具
只要烹饪时有家里都有的菜刀、案板和布,就能片鱼。最适合片鱼的是出刃刀,如果没有,用牛刀或者普通菜刀也可以。

鲷鱼
鲷鱼肉质不软不硬,是比较好切的鱼。将鲷鱼片成上侧、下侧和中骨三部分。
